I'm Virginia Stockwell and I started
Simply-VA, Personal Chef Services in 2012.
Back in 2005, I stumbled into working banquets at country clubs, eventually landing in high-end catering companies.
If you have any catering experience, you know that we actually call them "moving companies" because it's intense labor moving equipment from one place to another. Cooking is only a small aspect of a catered event.
Over time, it became evident that working 12 to 15 hour days and waking up to puffy feet and tired biceps was not sustainable, yet at the same time, I really enjoyed working with food and people.
As an outgoing person, I introduced myself to the ever-changing crew of new chefs that came into the business and learned that each held vastly different culinary backgrounds.
I had assumed each of the chefs had formal culinary training, but alas,
rarely was this the case. That's when I had an aha! moment...
With no formal culinary training and a lot of confidence, I was determined to start a personal chef business cooking for families that needed my help eating healthy, in particular heavy on the vegetables and light on the fat. My vision was a family with kids where the parents worked all day then came home hungry, asking themselves, "what can I make for dinner that will be ready soon and require little effort?" My meal prep would be their solution!
But wait...how do I go about getting clients? It turned out that was the secret to business, learning how to get clients.
Before venturing into catering, I sold real estate full-time. To catch up with my peers who had backgrounds in sales and marketing, I read every blog and listened to every CD (this was before Kindle and podcasts!) I could find on the subject of sales and marketing over my ten years as a top selling Realtor. So when beginning my personal chef business, I already had years of experience with local marketing.
Because I started a business using marketing foundations, I rarely had difficulty
getting new clients into my business, even though I had no formal culinary training.
I've turned away many meal prep clients and events because of my always full schedule.
